ASIAGO BUTTERNUT SQUASH PASTA SALAD

Asiago Butternut Squash Pasta Salad

Everyone’s favorite pasta salad…trust me!

Yield: 10-12 servings

PREP IT!   

  • 16 ounces Rotini pasta, multicolored or any kind of pasta – boiled in salted water until al dente.

  • 6 tablespoons Olive Oil

  • 1 small Onion, yellow, fresh, diced

  • 1 small Green bell pepper, fresh, diced

  • 6 cloves Garlic, sliced

  • 1 teaspoon Tarragon, dried

  • 2 tablespoons Taste Tutor Seasoning 101

  • 1 small Butternut squash, diced small

  • 2 large Roma tomato, seeds removed, diced

  • 1 can Black beans, drained

  • 1 can Corn, drained

  • 4 small Mini sweet bell peppers, multicolored, diced small

  • 1 small Cucumber, peel left on, diced small

  • 1 bunch Basil, fresh, julienned

  • 2 ounces Baby kale, roughly julienned

  • ¾ cup Italian vinaigrette

  • 12 ounces Asiago cheese, shredded

  • 8 ounces Parmesan cheese, shredded

  • 2 ounces Mozzarella, fresh, pearls

MAKE IT!

  1. Cook pasta and coat with 2 tablespoons oil.

  2. Sauté onions, garlic, and green pepper with 1 tablespoon Taste Tutor Seasoning 101 and tarragon in 2 tablespoons of oil.

  3. Coated butternut squash with 2 tablespoons oil and 1 tablespoon of Taste Tutor Seasoning 101, roasted at 425F until soft, at least 20 minutes.

  4. Combine above mentioned ingredients together and allow to cool in the refrigerator.

  5. Once cooled, add the remaining ingredients.

  6. Serve chilled. Enjoy!


Tip: If preparing in advance, don’t add tomatoes, basil, kale, or cheese until just before serving.
