BOUYE (BAOBAB JUICE)
Bouye (Baobab Juice)
A creamy, tangy beverage from the “Tree of Life”
Yield: 1 quart
PREP IT!
½ cup Baobab powder
4 cups Cold water
1 cup Coconut milk, full-fat
½ cup Sweetened condensed milk
1 teaspoon Vanilla extract
1 tablespoon Lime juice, fresh
1/16 teaspoon Sea salt, fine
Ice, for serving
Mint, for garnish
MAKE IT!
In a blender, blend together the baobab powder and cold water until completely dissolved.
Allow the mixture to sit for 5–10 minutes so the powder fully hydrates.
Pour the mixture through a fine mesh sieve or cheesecloth to remove any remaining fibrous particles.
Stir in the coconut milk, sweetened condensed milk, vanilla, lime juice, and salt until smooth.
Taste and adjust sweetness by adding additional condensed milk, if desired.
Chill for at least 30 minutes before serving.
Stir well before pouring over ice, as natural settling is normal.
Tips: Baobab naturally thickens as it hydrates, so if the drink becomes too thick after chilling, simply whisk in a little cold water. Shake or stir well before serving for the smoothest texture. Bouye pairs beautifully with spicy grilled foods and is commonly enjoyed during family meals, and festive celebrations throughout Senegal.
