Carolina Gal BBQ Chicken

The essence of my North Carolina upbringing and all the back-yard barbecues…

Yield: 5-6 servings

PREP IT!

For Brine:   

  • ½ cup Taste Tutor Brine

  • ½ gallon Water, cold

  • 10-12 pieces Chicken, skin on, bone in, cleaned

For Rub:

For BBQ Sauce:

  • ¼ cup Apple cider vinegar

  • ¼ cup Honey

  • 2 tablespoons Mustard

  • 1 cup Ketchup or BBQ sauce

MAKE IT!

  1. In a large bowl, dissolve Taste Tutor Brine in cold water.

  2. Add chicken to brine and tightly cover bowl with plastic wrap or a lid. Store on the bottom shelf of the refrigerator. Allow chicken to brine for 4 hours to overnight.

  3. In a separate bowl, stir together apple cider vinegar, honey, mustard, and ketchup or BBQ sauce until smooth. Cover and refrigerate until ready to use.

  4. Once chicken is brined and ready to cook, preheat a grill to medium high heat.

  5. Remove the chicken from the brining liquid. Pat chicken dry with paper towel and liberally apply Taste Tutor Carolina BBQ Seasoning to all surfaces of the chicken.

  6. Place chicken on a medium high heat grill and grill until cooked through (internal temperature of 165F) or bake in a 350F oven, on a flat foil or parchment lined baking sheet, for 30 - 45 minutes. Spread BBQ sauce over all surfaces of the chicken.

  7. If using an oven, set broiler to 500F. Grill or broil sauced chicken for 5 to 10 minutes until sauce is bubbly and begins to caramelize on the chicken.

Tip: Bake the chicken in the bbq sauce so the chicken juice and bbq sauce meld for an amazing sauce to eat over white rice. I also eat this with green beans.
