FRESH CARIBBEAN GREEN SEASONING

Ingredients

Fresh Caribbean Green Seasoning

Adapted from a verbal recipe I got from my Anguillian cousin from her grandma. Use as a marinade for all your favorite Caribbean recipes.

Yield: 1 batch (3 cups)

PREP IT!    

  • 1 bunch Culantro or Cilantro

  • ½ inch Ginger, fresh

  • 1 stalk Celery (including leaves)

  • 1 head Garlic (about 11-16 cloves)

  • 4 each Scallions (green onion)

  • ¾ cup Thyme, fresh or dried

  • ¼ cup Water

  • ¼ teaspoon Salt

  • 2-3 Shallots

  • 2 each Pimento peppers (or substitute banana peppers or cubanelle peppers or anaheim peppers)

MAKE IT!

  1. In a blender, add all ingredients. Blend until smooth.

Tip: Make a big batch and freeze for later.
