Ji Citron au Lait (Haitian Limeade with Milk)

Yield: 32 ounces
PREP IT!
6-8 Limes, washed, zested, and juiced (about ¾ cup)
½ cup Sugar, granulated
¾ cup Sweetened condensed milk
½ teaspoon Vanilla extract, clear
¼ teaspoon Almond extract
3 cups Cold water
Ice
Fresh lime slices, for garnish (optional)
MAKE IT!
In a large mason jar or pitcher (half gallon sized or larger) add lime zest and sugar. Cover and let infuse for 4-24 hours. Sugar will be the texture of partially wet sand after infusing. This is because the essential oils from the lime peel are being extracted and infused into the sugar over that 4-24 hour period. This gives you the taste and aroma of true lime in your finished limeade.
Add the juice from the limes (about ¾ cup) and 3 cups of water. Stir to dissolve sugar. Stir in sweetened condensed milk, vanilla extract, and almond extract. Serve immediately over ice!
Tip: Spike with your favorite Haitian rum to make it a cocktail!
