LEMON VANILLA BEAN GINGER ALE
Lemon Vanilla Bean Ginger Ale
Did you know you can make your own ginger ale from scratch?! This is my bestie’s recipe with a lil Taste Tutor razzle dazzle. And if you not feeling well, drink this and go lay down! You’ll be aight!
Yield: 6-8 servings
PREP IT!
1½ cups Sugar, granulated
1½ cups Water
1 hand sized piece Ginger, fresh, washed, peeled, blended (about 2 cups of ginger puree)
1 small Lemon, washed, peeled (keep the peel with no white part)
½ large Vanilla bean, split
2 quarts Sparkling water, Seltzer water, or Club soda
Ice
MAKE IT!
In a small saucepan, combine sugar and water. Bring to a boil over medium heat, stirring to dissolve sugar. Simmer for 2 minutes until syrupy, then remove from heat and allow to cool to room temperature.
Purée ginger.
Pour the simple syrup into a large mason jar or pitcher (half gallon sized or larger). Add the ginger purée, lemon peel, and vanilla bean. Stir well, cover, and let infuse in the refrigerator overnight (or for a whole week if you’ve got the patience). The syrup will pick up the fiery heat of the raw ginger, the bright aroma of lemon, and the smooth depth of vanilla.
The next day, strain the syrup through a fine mesh strainer into a clean jar or pitcher, pressing on the solids to extract as much flavor as possible. Save the solids to add another round of simple syrup.
To serve, fill a tall glass with ice. Add about 6 tablespoons ginger-vanilla-lemon syrup (or to taste), then top with 1 cup sparkling water. Stir gently.
Enjoy cold and bubbly!
Tip: If you finish the syrup quickly, you can reuse the leftover ginger pulp and lemon peel once more. Just make another batch of simple syrup (1½ cups sugar + 1½ cups water), pour it over the used pulp and peel, and let it steep overnight again. The second round will be a little lighter in flavor but still refreshing!
If you don’t finish the syrup quickly, it freezes well. It won’t freeze solid because of all the sugar in the syrup, but it will be slushy so you can scoop out a little bit at a time when you wanna make a glass of ginger ale.
