Gullah Spiced Kale Stir Fry with Garlic Fried Rice and Beans

Gullah Spiced Kale Stir Fry with Garlic Fried Rice and Black Beans

Yield: 4-5 servings

PREP IT!

  • 2 cups White basmati rice, dry or any long grain variety

  • 2¾ cups Vegetable broth (can substitute with any broth)

For Gullah Spiced Kale Stir Fry:

  • 4 tablespoons Oil, any kind

  • 1 medium Red onion, fresh, sliced

  • 16 cloves Garlic, fresh, sliced

  • 5 large Baby bella mushrooms, fresh, sliced (optional)

  • 10 ounces Kale, fresh, chopped or ripped

  • ½ cup Vegetable broth (can substitute with any broth)

  • 2 small Roma tomatoes, fresh, diced

  • 2 teaspoons Taste Tutor Seasoning 101

  • 2 teaspoons Taste Tutor Gullah Seasoning

For Garlic Fried Rice & Black Beans:

  • 4 tablespoons Oil, any kind

  • 16 cloves Garlic, fresh, minced

  • All of the Cooked rice

  • 1 can Beans, any kind, drained and rinsed

MAKE IT!

  1. In a medium pot or rice cooker, add rice and vegetable broth. Cover tightly and bring to a boil. Once boiling, turn heat to the lowest setting and allow to steam.

For Gullah Spiced Kale Stir Fry:

  1. While rice is cooking, heat oil in a large sauté pan over medium high heat.

  2. Sauté half of the sliced onions, all the garlic, mushrooms (if using), 1 teaspoon of Taste Tutor Seasoning 101, and 2 teaspoons Taste Tutor Gullah Seasoning, until soft and caramelized, about 3 minutes. Reduce heat to medium and add kale. Allow kale to wilt for about 2 minutes.

  3. Add ½ cup vegetable broth, tomatoes, and remaining onions. Allow to cook down until broth has almost cooked off, about 5 minutes. Sprinkle with the remaining Taste Tutor Seasoning 101. Taste and add additional seasoning if you’d like.

  4. Set aside.

For Garlic Fried Rice & Beans:

  1. In another large sauté pan, allow oil to heat over medium high heat.

  2. Add minced garlic and fry until garlic gets golden brown and crispy. Add cooked rice and stir fry to coat with garlic and oil.

  3. Add beans and stir until evenly distributed.

  4. Serve hot with Gullah spiced kale stir fry.

Tip: Rice cooks using steam. Whichever method you use, be sure the lid is tight, so the steam is trapped in the cooking vessel. This will ensure your rice is cooked perfectly every time. If substituting brown rice do 2 cups brown rice to 4 cups broth.

Reheat leftovers: combine leftover rice and kale stir fry in a pan and sauté until heated through.
