MANGO AVOCADO SALAD
Mango Avocado Salad
Refreshing tropical salad my parents had on a cruise that my mommy recreated at home…
Yield: 3-4 servings
PREP IT!
2 large Mango, ripe, chopped
1 large Avocado, firm yet ripe, chopped
4 - 6 Figs, fresh, cut into quarters (or you can use dried figs)
2 tablespoons Pine nuts, toasted
½ Lime, fresh, juiced
1½ tablespoons Honey
1/8 teaspoon Salt
For garnish Mint, optional
MAKE IT!
Cut all the components into equal sized chunks.
Squeeze ½ lime on the avocado.
Add avocado and fruit to a bowl.
Drizzle honey over the fruit and sprinkle with salt.
Very gently stir to coat everything in honey.
Garnish with mint (optional).
Tip: Great to eat with super spicy food!
Store leftovers: up to 1 day.
