MANGO AVOCADO SALAD

Mango Avocado Salad

Refreshing tropical salad my parents had on a cruise that my mommy recreated at home…

Yield: 3-4 servings

PREP IT!             

  • 2 large Mango, ripe, chopped  

  • 1 large Avocado, firm yet ripe, chopped 

  • 4 - 6 Figs, fresh, cut into quarters (or you can use dried figs) 

  • 2 tablespoons Pine nuts, toasted 

  • ½ Lime, fresh, juiced 

  • 1½ tablespoons Honey 

  • 1/8 teaspoon Salt 

  • For garnish Mint, optional 

MAKE IT!

  1. Cut all the components into equal sized chunks. 

  2. Squeeze ½ lime on the avocado. 

  3. Add avocado and fruit to a bowl.  

  4. Drizzle honey over the fruit and sprinkle with salt.  

  5. Very gently stir to coat everything in honey.  

  6. Garnish with mint (optional).  

Tip: Great to eat with super spicy food!

Store leftovers: up to 1 day.
