Multipurpose Breader

Multipurpose breading great chicken, fish, seafood, or vegetables…

PREP IT!

  • 1 cups Flour, all purpose

  • 1 cup Cornstarch

  • 1 cup Cornmeal

  • 1/3 cup Taste Tutor Seasoning 101

  • 3 tablespoons Taste Tutor Blackening Seasoning

  • 1 teaspoon Thyme, dried

  • ¾ teaspoon Poultry Season

  • ½ teaspoon Chili Powder, Cayenne Pepper, or Piri Piri Pepper

  • ½ tablespoon Oregano, dried

  • 2 teaspoons Bay Leaf, ground

MAKE IT!

  1. Stir all ingredients together and use as desired. 

  2. Store unused breader (not dipped in meat or vegetables yet) in a baggie in a cool dry place.

Tip: The cornstarch helps maintain the crispness of the breader after frying. This is due to the rigid bonds formed between amylose and amylopectin (two of the polysaccharides that form a starch) at high temperatures. Because amylose forms linear bonds which are not as easily broken as the branched bonds amylopectin forms, starches high in amylose are better for forming crispy breaders and batters. Cornstarch contains more amylose than other starches so it is good for use in batters and breaders resulting in a crispy finished product.
