SOUL FOOD CONCOCTION RICE
Soul Food Concoction Rice
I’ve seen people making new recipes with soul food ingredients. Here’s my version of the fried rice I’ve been seeing using leftover soul food items.
Yield: 4-5 servings
PREP IT!
2 cups Rice, parboiled
1 tablespoon Minced onion, dried
1 teaspoon Bouillon, any kind
2¾ cups Water
1 large Rib (pork or beef), remove meat and diced into small chunks
1 tin Sardines or Mackerel, with oil
2 tablespoons Oil from tinned fish
3 cloves Garlic, fresh, minced
1 small Onion, yellow, fresh, diced small
1 medium Red bell pepper, fresh, diced small
2 stalks Celery, fresh, diced small
1 large Habanero, fresh, minced
2 tablespoons Taste Tutor Seasoning 101
2 teaspoons Taste Tutor Gullah Seasoning
½ cup Smoky braised greens, drained
4 ounces Okra, fresh or frozen, sliced
¼ cup Parsley, fresh, diced
¼ cup Green onion, fresh, sliced
MAKE IT!
Cook rice, minced onion, and bouillon in water until tender. *See tip on how to cook rice below.
While rice is cooking, in a large dry saute pan, over medium high heat, char okra to reduce the slime. Remove and set aside.
In the same pan, reheat rib meat. Remove from heat and set aside.
Add sardines or mackerel to pan and allow to heat for 2-3 minutes. Remove fish from heat and set aside with rib meat.
Add oil and allow it to heat. Add fresh garlic, onion, bell pepper, celery, and habanero and saute until onions begin to caramelize. Add cooked rice and allow to fry for 3-4 minutes, stirring occasionally.
Sprinkle Taste Tutor Seasoning 101 and Taste Tutor Gullah Seasoning over contents of pan. Saute for an additional 2 minutes.
Add back rib meat, crab meat, and greens. Saute for 3 more minutes until greens are heated through.
Once rice is nicely toasted and everything is coated with the seasonings, add in okra, parsley, and green onions. Turn off heat.

Tip:
How to Cook Rice: To cook rice, use a rice cooker or in a medium pot, bring rice and liquid to a boil. Once boiling turn heat down to low. Cover pot with foil and lid to trap the steam in. Allow rice to steam for 20 -30 minutes until rice is tender. Do not stir rice until it has finished steaming. Keeping the heat on low will prevent rice on the bottom from burning while cooking. But honestly, if you do accidentally burn the some of the rice, who doesn’t love the burnt bottom part of the rice pot anyway… flavor!
Reheat leftovers: in a skillet or in the microwave.
