AKARA WAFFLES
Akara Waffles
Everybody loves akara for breakfast!! Let’s make akara into waffles for a high fiber, high protein start to the day!
Yield: 4-5 waffles
PREP IT!
For Akara:
1 pound dry Black-eyed peas, soaked overnight and peeled (peeling is optional but you’d end up with black specks from the skin in your akara fritters if you don’t peel. If you decide not to peel, blend an extra 2-3 minutes or until batter is smooth)
1 - 4 large Habanero, fresh (optional)
1 medium Red bell pepper, fresh
1 large Yellow onion, fresh, large
1 tablespoon Baking powder
2 tablespoons Taste Tutor Seasoning 101
1 tablespoon Bouillon, any flavor
2 teaspoons Red palm oil
MAKE IT!
For Akara Waffles:
Preheat non stick waffle iron to medium heat.
In a blender, puree black eyed peas, habanero, red bell pepper, onion, baking powder, Taste Tutor Seasoning 101, and bouillon for 10-15 minutes or until smooth and airy.
Once, you’re ready to make your waffles, if the waffle iron is non-stick, no need to spray it, but if it does stick sometimes, go ahead and spray with nonstick spray.
Scoop about ¾ - 1 measuring cups worth of batter onto the center of the waffle iron.
Cook for 4-5 minutes until the steaming stops or until your waffle iron beeps that its ready, depending on your waffle iron.
Enjoy hot with your favorite breakfast sides! I love it with a super runny egg and garnished with chives!

Peel soaked beans by pulsing them in a blender to loosen the skins. Repeat pulsing until most of the skins are loosen being careful not to blend the beans into a puree. Pour the beans out into a bowl.
Pour water into bowl to allow bean skins to rise to the top.
Pour the water containing the loose skins off. Repeat until most to all the skins have been rinsed off.
Peeled beans
Reheat leftovers: in the oven on 350F or in a toaster until warmed through.
