Roasted Tomatillo Hatch Chili Verde Sauce

Someone gave me fresh tomatillos at work so this is what I did…

Yield: 3-4 servings

PREP IT!             

  • 8 Tomatillos, de-husked and cleaned, halved

  • 3 Jalapeños, halved

  • ½ Red Onion, diced

  • 10 cloves Garlic, whole

  • ¼ Cilantro, fresh

  • 10 sprigs Thyme, fresh

  • ½ tablespoon Cumin, ground

  • ½ tablespoon Hatch chili, ground

  • ½ tablespoon Taste Tutor Seasoning 101

  • ½ tablespoon Oregano, dried

  • ½ tablespoon Roasted Green Pepper, dried

  • 2 tablespoons Bay leaves

MAKE IT!

  1. Roast tomatillos, jalapeños, onion, and garlic in a 425F oven for 25 minutes until vegetables are slightly charred.

  2. Blend roasted vegetables with remaining ingredients.

  3. Use sauce as desired.

Tip: Sauce is very spicy so adjust jalapeños and hatch chili powder down if necessary.

Reheat leftovers: in the oven or in the microwave.
