Asun (Peppered Goat Meat)
My all time favorite Yoruba dish!
Yield: 4-5 servings
PREP IT!
Pepper Blend
½ large Bell pepper, red, fresh, cut into 16 chunks
½ large Bell pepper, orange, fresh, cut into 16 chunks
½ large Bell pepper, yellow, fresh, cut into 16 chunks
½ large Bell pepper, green, fresh, cut into 16 chunks
½ large Onion, red, fresh, cut into 16 chunks
¼ large Onion, yellow, fresh, cut into 8 chunks
1 clove Garlic, fresh, whole
¼-inch piece Ginger
2 - 4 large Habanero peppers (depending on your desired spice level)
Goat Meat
2 pounds Goat meat, cubed, cleaned, and trimmed
2 teaspoons Taste Tutor Smoked 101
4 tablespoons Curry powder
1 bunch Thyme, fresh (or 1 teaspoon dried thyme)
2 large Bay leaves
½ large Red onion, chopped
1 large Habanero pepper, halved
2 tablespoons (or large cubes) Chicken bouillon
32 ounces Chicken broth

2 pounds Goat meat, cubed, cleaned, and trimmed
1 teaspoons Taste Tutor Smoked 101
2 teaspoons Taste Tutor Pepper Soup Seasoning
2 tablespoons (or large cubes) Chicken bouillon
MAKE IT!
Pepper Blend
In a blender or a food processor, add all ingredients and pulse until approximately the vegetables are 1/8 inch in size.
Pour ingredients into a strainer and allow to drain, refrigerated, until most of the water has separated from the pepper blend (about 8 hours).
It is now ready to use.
Goat Meat
Prepare your grill.
Trim goat meat of excess fat. This will prevent your broth from being overly oily; some oil is good. Rinse goat meat with water and vinegar to make sure they are extra clean after trimming.
Grill goat meat over medium heat until outside is seared and smoke flavor is infused into the meat.
Add grilled goat and all ingredients to a large pot and bring to a boil.
Cook for 2 - 3 hours, covered, stirring every 30 minutes on medium-low to low heat or until goat meat is tender and begins to fall off the bone.
Preheat oven to 450F. Remove goat from broth and place on a parchment lined baking sheet. Roast for 20 minutes until it begins to brown and is partially crispy. Set broth aside to use in soup. If desired, take meat off the bone before roasting it.
It is now ready to use.

Over high heat, add oil, into a large skillet. Once oil is hot, add in strained pepper blend, prepared goat meat, Taste Tutor Smoked 101, Taste Tutor Pepper Soup Seasoning, and chicken bouillon.
Sauté until pepper flavor infuses into goat meat, about 7 - 10 minutes.

Tip:
Reheat leftovers: in a skillet with a little bit of water over low heat or in a bowl with a little bit of water, covered with plastic wrap and microwave about a minute.
