Roasted Garlic Coconut Mashed Sweet Potatoes

Mashed sweet potatoes like you’d get at one of those pricey steak houses but way cheaper and way better!!

Yield: 4-5 servings

PREP IT!             

MAKE IT!

  1. Place peeled and chopped sweet potatoes in a large pot and cover with cold water.

  2. Bring to a boil and cook until fork tender. Drain water and leave potatoes in the pot.

  3. Meanwhile, in a separate pot or in the microwave, heat butter, roasted garlic, and coconut milk, on low until butter is melt.

  4. Add all the ingredients to the pot with the sweet potatoes and mash everything together.

  5. Season with Taste Tutor Seasoning 101.

  6. Serve hot immediately.

Tip: Starchy potatoes like russets or Yukon golds (my favorite) work best for creamy mashed potatoes. Waxy potatoes like the red skinned ones are best for smashed potatoes or potato dishes in which you’d like to add some differences in texture.

Reheat leftovers: in the oven or in the microwave with a splash of coconut milk.
